I've just got one of these latches and pins for mine, any tips of how to fit it

What shims / clearance is there?

Do I have to shave anything off the seat base?

not much to do. just pull some of the staples cut a small amount of the seat base nuts and bolts on the seat side and drill a hole on the ski side.
