correct it is a pain in the ass, but this can be made slightly easier it the holds are spotlessly clean to allow the adhesive to stick, use a heatgun to help the turf become more supple, then use golf and tennis balls wrapped in rags to jam into the holes to hold the turf in place whilst the mat cools down and the adhesive sets proper
 
yeah usually, if you get the precut sides with hydroturf lettering in them, use duct tape to completely cover the letters and hold them in place before you apply the glue, this also stops the mat pulling apart around the letters and end up looking crap.

Start the turf at the outside edge, aligning the fwd curved bit first, then gradually follow the ouside edge, then "fold" over into the inside of the tray.

tip. if you choose the correct color silicone sealent, this can be run up any dodgy looking joins, to tidy up the final finish - but again the mats have to be spotlessly clean to allow this to stick, and it has to be done before it is ridden

if you let the contact dry enough then you should not have use the golf balls and such, but that is a great idea!

Heat and patience is your friend.

Does anyone use something to duplicate the tray area and transfer it to hydroturf to cutout? Ive tried using just normal masking paper but its a PITA to really make it accurate with all the curves..

I use thick paper like from paper bags at the grocery store. Newspaper can work but it tears easily when you try to cut it.
