The 62T head is set up for a couch pipe. So the water outlet on the head pointing towards the bow would ordinarily face the other way on a 61x head and go to the exhaust midpipe. I would not dump that overboard without adding a tee and running a line to your exhaust midpipe.

One thing I didn’t see on your list is a midshaft spacer. Aftermarket hulls (tigercraft at least) need the spacer for the mid shaft to seal properly against the bulkhead. I forgot this on my SV1 build…

You’ll need a 61x head if you want the pipe to mount up properly. The raider manifold outlets to the back of the ski so it won’t work in the superjet. Also you’ll have to thread some m8 helicoils into the 62t cylinder, the bolts are m10 but the superjet exhaust manifold only accepts m8
Is the Rad Dudes exhaust tube angled upward like stock? I wonder if it can clear a wide tray? Or if you can rotate the exhaust tube to drop it down in order to clear, similar to the RN exhaust tube. Anyone have one that can chime in?
