1100 Triple WaveBlaster WB1

Hi guys. I have a really nice 1100 triple from a fresh water Wave Venture in my WB1 that seems to have a bog when I smack the throttle. If I roll the throttle, it's fine or smack the throttle once the pop off has popped the needle jets open, like from mid throttle to full it's fine. Idles fine but if i hit the throttle too fast from idle, it bogs. The engine is clean inside and out. Here's what I've done so far:

-cleaned the contacts on the stator
-cleaned and rebuilt carbs with Mikuni carb kits
-brand new 1.5 N/S in all 3 carbs
-set all of the hi and low adjusters back to stock
-new fuel pump
-case holds pressure great
-compression is 115/115/112 on a Lisle gauge
-swapped start/stop switch with my surf blaster that works fine

I really don't know what else to try. I really don't want to take it to the shop to have them tell me that this 1100 engine does not belong in this ski which we all know is not the problem. I'm not new to these swaps or working skis and motocross bikes, but this has me baffled. Any suggestions will be appreciated

Thanks for your response. I figured it out. Pop off was good. Stock settings were too lean. I thought this might be the case since when I rolled the throttle, it was fine. I am only running 1 screen so it needed more fuel. I tried to include everything in my first post but I always seem to forget something important and only running 1 screen gives it more air, hence needing more fuel. I hope this post can help someone else out.
 
Right on , I had a problem with my single carb. My filter was too free flowing and I didn't have enough signal strength to pull the fuel from the carb at wot. Blew an engine :( . Stock f/a ftw.
