hey so I'm wondering if the Wet Jet 46mm carb and manifold set up is a vbetter set up than the stock 61x 44mm carb and manifold? And where it's better if so. Also if the 46mm carb is better, is the wet jet manifold the best on out there? Or would porting out the stock manifold be better? Any advice is helpful thank you! Also my set up is
61x with 185 psi head, msd ignition, b pipe, porting cylinder this week.

If you're running a stock setup a 44 carb will be fine. I ran nicely ported 61x for years with a 44 and it was very snappy and saved a ton on gas vs. a 46.

The wpp Wetjet manifold is noticeably better than stock 61x.
Built in Reed stuffers, better flow.
I noticed a difference on my B1.

A 46 will run better then the 44 with your mods. It will fit the stock manifold just fine.
A wetjet manifold requires the matching 46 as the bolt pattern is different then standerd SBN's.
You cannot run a 44 on a wetjet manifold.

The carb mounting studs are farther apart on a wet jet manifold. It does rev higher and is quicker. I have a complete wet jet set up with a matching 46 and carbon fiber reeds laying around because I ended up using dual keihin sudco 42s on my 61x.
