jetting for 701 stroker

i am running a 61x motor with a 5 mil stroker ported cylinders and coffman pipe, i have a pair of 44 mm black jack carbs but no internals i was just wandering what size needle and seat to go with as well as base jetting, pop off pressure and spring rate
