Okay so I just learned how to whip the ski side ways by hitting the throttle the and cranking to the side. I was wondering what you could do and how far you could rotate cause most of the time I fall out of the tray when I land

You mean sliding? Try a 180, then progress to a 360. It helps to put your chest into the bars to keep the nose down.

Do you mean nose stabs? I feel the ski and the wave do all the work on those and all you have to do is hold on and stay in!

I'm talking about an in air rotation. Like when you go to jump but in stead of going stright you crank it left or right then jump. I have a 650sx it feels like I need a big wake or a bigger motor to do a in air 180

When you do your stabs are you leaning hard and turning as you ride up the wave? Or are you keeping your body more center?

I haven't got a full 180 yet. almost

I don't know I can't see myself...lol....

I can't really do stabs anymore.....they turned in to rolls and now I can't figure how to stab!

It's all about body rotation. Crank it all the way left or right at the top of the wave or just before lift off. As this is happening your head and body should already be looking 180 behind you. Your body will naturally pull the ski.
