I have no idea if this is the right way to do it, but it worked for me.

I slowly lowered the hood to see where it hit and also took measurements and drew it out on the hood. Different engine mounting methods will need different cutouts. Then I cut the hood with a dremel drill cut off wheel. Take the cut out parts out in one big piece, then grind or cut foam out. After a few test fits and further cuts I flipped the removed pieces over and fit them to the opening. When I had a good fit I epoxied them in place. Any gaps or open areas I didn't have pieces to fit in I just used extra epoxy. Sand it smooth and it looks great (Note: the photo looks bad with pieces in the epoxy because the epoxy is transparent, but its smooth and finished well after sanding). Now I just need time to paint it.
