Who can tell me how much i need to have milled off the bottom of my stock 760 head to get around 180psi compression?

Just swap to a 61x head. Shaving a 760 head will still net you uneven numbers because the rear dome is larger.

64x - 760 piston is 84mm and a 61x - 701 is 81mm
Wouldn't the squish area be all messed up because of the 3mm smaller head dome diameter of a 61x - 701 head and a 64x -760 piston?

It would be fine. I have ran a 61x cylinders bored to 84mm. With a 701 Ada head. Would it be better...yes but I don't think it matters that much in a budget application.
