93 SN SJ Project - Input welcome and needed

I bought someone's stalled project who bought someone's stalled project. Maybe the original owner will recognize it and shed some light. I'm ready to put it together. It came with a Yam 760X WR. I am CLUELESS on the process but very capable of getting it done. (I convert Hummer H2's to Duramax/Allision driveline). I'm between projects so I picked up a couple 440’s for my kids and wanted something bigger for my 225lb frame. The person I bought it from was going to put in the 760. I bought a built 701 instead but kept the lower end and dual carbs to be used later. The engine was built 3-4 years ago. It was bored and ported but i don't know to what degree. It was built by someone who knew what they were doing. There have been some modifications to the cover and an extra waterline running to the pump.

If any of you are willing, i'd like to understand what parts i need to source, based on my pictures. I'm thinking i only need a water box and maybe some hardware. I have 701- e-box, fuel tank not seen in pictures. I want to minimize aftermarket upgrades unless they are an absolute must. I saved the trim from the 760 and want to incorporate if possible. At this point i only have stock exhaust without a waterbox.

Your options are pretty open for water lines. Some people use pneumatic air hose, some clear reinforced hose, some use silicone. I know in my Kawi's I bought 10' of each (water and fuel) and had some left over, but not a ton. I used translucent silicone hose for both.
 
I'm stuck and could use some input. I'm getting ready to put motor in the ski but can't stop thinking that I'm making a mistake by NOT using my 62T bottom end so i can run dual carbs. Should I or shouldn't I. It's here the engine is out and never been fired. If i do, can i use the carbon reeds on the 61x. Anybody recognize what these are?20170630_180034.jpg
 
61x reeds won't fit the 62t Intake...I'm a fan of the simple 61x single carb setup, get it tuned right and it will rip. I personally don't see a huge benefit to swapping it all unless you need to take it apart.
