The aluminum mounts for the SN's are nearly impossible to find so that pretty much just leaves you with the option of gluing them to the hull with epoxy.

I'm contemplating getting somebody to do me a batch of SN mounts but demand is so low it doesn't make a lot of cents. ;)

You can just glue the bilge bucket to the right or left of the midshaft. Just make sure its far enough away that when you install the bilge pump, it doesnt hit the coupler.

What do y'all recommend to epoxy it down with?

check out this link. You get two pieces with the bilge there is a plastic mounting rack (the blue thing in the picture on the link above) that you epoxy to the hull. Simply remove the bilge pump and let epoxy dry, the do plumbing and electrical. If you plan on running dual bilge just make sure that the hoses are facing opposite to each other. If you can get the following epoxy use this

@sharkcus

Been casually looking for one for a while myself. If you do than I will certainly buy one.

I make my own aluminum brackets that mount to the rear motor mount but what I used to do was get a piece of square 1/4 thick nylon drill and tap 4 holes for the bracket and score up the bottom side with bandsaw recip saw grinder ect for the bonding material to grab and glue it down. I always used silicone works good.
I wouldn't glue the bracket direct to hull unless ur doing it with silicone. If u break a bracket u will have a mess trying to replace it...
