i know its intimidating to cut a bunch of your hull off but you need to cut back a lot farther to achieve any type of functional rocker. Id suggest all the way to where the bottom of the hull. 2-4 lb foam is fine for shaping but its key to mix it very thoroughly and apply it very evenly so that your get consistent foam density which will greatly aid in the shaping of the foam. (DO NOT use foam in a can!) Foam can be hard to shape if you got some really rigid spot and some really soft and gooey spots. once you get a rough shape that is close to being symmetrical and to your liking you need to start using bondo or plaster to get a more solid less porous surface. Then you can apply a release agent like PVA to all the foam surface so it is easier to take out the foam from the hull once its all glassed over. would have actually been best to spray a release agent all over the inner hull before foaming but too late

Use 3-4 layers of a lightweight cloth like 6 oz twill and glass it all up going about 6" past the cut lines of hull leaving an inch or two to feather sand out the edges. remove all foam from hull (wire wheels work well and wont cut your 3 layers of glass you just laid). Then layup all your structural glasswork from inside the hull. 1-2 layers matting, 2-3 layers 6-10 oz twill, 4-6 layers 12 oz biaxial glass, last layer you can use some matting or a light layer of twill to keep it nice and smooth so it wont splinter your hands every time you have to work in that area

Epoxy resin is highly recommended but a quality isopthalic or vinyl ester will be sufficient if you are on a tighter budget,,,,but DO NOT use boatyard resin like you would find at Home Depot or Wal-Mart. Cheap Polyester stuff will delaminate very quickly and almost not stick at all without very good prep work and coarse grit sanding of surfaces. ALso Polyester resins are very unhealthy and stinky!
If you decide the foam shaping is too much work or not your thing I sell ROCKER nose kit for the RN hull that are perfectly symmetrical and come with templates and a guide on where and how to cut your hull exactly so fitment of the Nose kit is a breeze and its about as difficult as installing footholds
