What is the difference between these two heads? I have an ADA 701 head and was wondering if I could buy 760 domes for it and use it on a 760 cylinder?

Same head, Yes... just use 760 domes.
You will need to do some drilling if your going to run the long head girdled studs, they don't clear the oem pipe bolt pads.

You stated you have a 760 cylinder right? 62T casting raider or venture cylinder and the 64X 760 cylinder have a overhead exhaust pipe and the head gasket deck on the cylinder has a pad area that the OEM exhaust bolts to the cylinder at the deck.
The pad is right inline with the base bolt for using ADA's stud kit for there girdle hardware. ADA's studs will interfere with this pad and will need to be drilled or side milled on the pad so the stud can clear as it passes the cylinder and goes up through the head.
