You should probably be researching carb jetting, water routing looks fine. I ran 135 H 125 L on a single 48mm Bomber carb on a similar setup.

Close your bottom (Low end Carb setting) all the way and see if it makes a difference. If it closed all the way and still runs fat you will need to rejet. Do some searches on carb jetting.

Yeah 180 main seems really high. I'm running a 150 main in sbn46 on a ported small pin 750 with a factory pipe. Opening the top screw will give better acceleration and bottom end. I recommend these settings on the head pipe. Top 1/2 turn open, middle- 1/4 turn open, bottom closed

You are describing a ski with water routing and b pipe settings that are reasonable, and jetting that is hugely unusual and really rich.

I don't even know if there is such a thing as a 180 main jet for a mikuni carb, are you sure that's right?

I would be looking at jetting.

do you have a water restrictor going into the stinger pipe. You also appear to be missing a carb

I just double checked and it is a 180 Main and 140 pilot... But im sure i have to go down because the plugs are way to dark

I think your biggest issues are making sure the impeller is pitched low enough and learning how to tune your carb. The ignition timing should be checked as well.
