The more surface area you have on the ground, the easier it will move over the sand. Assuming the actual tire outer diameter is the same, four 5" wide tires will roll the same as two 10" wide tires but the two wheel version will be easier to maneuver while the 4 wheel version won't require balancing.
On the two wheel beach carts we made for standups, we have always had the best luck with wheel barrow tires. We thought a wide tire would be best and initially tried turf tires like the ones you find on the front of a small lawn tractor. Aside from the fact that the turf tires are MUCH heavier, they were horrible at going through deep sand. Surprisingly the narrow wheel barrow tires are far superior in my opinion. You can get the ones with an inner tube or the solid tires that don't require air. If you look in the right place they can be picked up for pretty cheap too.
