Wilks...I strip mine bare when they start to peel and either keep them lubed with silicone or clear coat em.
 
We don't really have the corrosion issues here..but I have used some rollcage paint..it is gloss black, coats well, and is supposed to be heat/fuel resistant.

Have any if you guys dipped your corroded carbs in CLR? My father has mentioned doing this with carbs with great success.

I clean my carb parts in "Chemdip". Never used it to remove paint but it has removed heavy corrosion from brass fittings after soaking for a few days they looked like new. It will eat the rubber and plastic parts so if you go that route you will likely need to replace the shaft bushings.

I had mine painted with a ceramic paint. They look nice. I think I paid $40 to have it done.
