Assuming that current epoxy is already cured you will have to scuff/sand it to get more epoxy to adhere correctly. If you are still in the open window, usually less than 24hrs, you can fill coat without scuffing.
Maybe if the gun is disposable. You wouldn't want to waste gallons of acetone to clean the gun out afterwards.
If the carbon is saturated correctly then don't worry about it, filling the weave is only cosmetic and does not add strength. The only benefit I can see is ease of cleaning.
I used interlude epoxy primer and white bilgekote. Makes for a bright engine bay and easy to clean. Epoxy primers function as a sealer. Of course this way you will loose carbon look.
If you need to for cosmetic reasons I would clear coat it with a good two part enamel or epoxy. I have tried getting a finish coat with resin and it is more hassle than it is worth. Prep well before adding another layer of anything. If you just want a somewhat glassy look you can just brush on epoxy resin real thin it's just not that pretty.
