Super Jet carbs too rich how to adjust

I am not sure what's up with my carbs, but if i ride for 2-3 hours the carbs get really fouled and i have to replace them. I am having an issue that i am not sure how to correct. The ski pulls unbelievable however there is on spot in the power curve that it hesitates. You can ride and keep popping the throttle and it responds awesome. The problem occurs if you go to hit a wake, release the throttle to roll into it and then crack it wide open. There is a hesitation there where it take 1-2 seconds for the ski to react. I submarined through a few trailing waves because of this. The carbs getting fouled makes me think it is running too rich, but I am not sure if i need to lean out the highs or lows.
 
here's what i got. 760 with mild case porting, MSD Enhancer, TBM lightened flywheel, v-force II reeds, OEM dual SBN 44's. they are jetted at 122.5 high and 117.5 low, 2.3 needle/seat and 95 gram spring. 2 turns on the lows and 1 1/8 on the highs.

Oh darn, OEM carbs.
I haven't been real successful with those carbs, they have a bunch of things that are way different than the aftermarket carbs.

The stock 38's from a superjet work pretty good on the smaller cc 701's.
Maybe someone that has some success with them will chime in.
Where's some of the old timers? Lots have run them in the past?
 
So I finally got really pissed off with the OEM carbs and bought a set of dual 46's from xmetal. WOW! The carbs came in and Chuckie nailed the setup. The ski runs unbelieveable and the bottom end is sick. So far the best thing i bought from my ski.

I've been waiting to hear how it's going...Feedback is always good, even if it's bad so we can find other issues sometimes!
P.S. I have lots of extra jets in some sizes, (take outs from new carbs) so I gave you some free just in case!
 
mine was doing the same with stock dual 38s, When i rejeted theme and took chokes off of theme, i didnt have theme synched right, and the small filters in the carbs were pretty clogged, after i unclogged theme and put back together, got theme tuned good, havent had problem since, wondering if ill have to do anymore adjustment after i put my stubby pump cone on and my bored reduction nozzle to 85mm from zero back on.
 
I saw you shipped the 120's along with the carbs. But, you did nail the setup. The first day i went to run the ski i forgot to make the pulse lines the same length. She ran great on the hose, threw it in the water started it up took off jumped twice and the motor died. Couldn't get it started the rest of the day. I think it was an ignition problem (either weak battery or ebox gremlin). Pancake and i experienced a similar problem with it a few weeks prior. Anyway, that night I remembered the pulse lines!! Of course it took me a few days to get a free minute to fix it. Anyway, threw it in last friday and was blown away but how awesome it was running! Then spent about 4 hours on the water saturday just ripping. The X Scream dual 46's are awesome, money very well spent. After a year of d*cking around with a so called "engine builder" (Robbie Crossely @ CP Watercraft) I finally gave up and went to X Scream. He had no clue what he was doing and wasted my entire summer. Chuckie...I can't thank you and Chad enough. I ordered these carbs last Friday and had em next day aired, got them on Saturday setup and ready to go. You guys are awesome!
