Are you trying to showcase the hull or your tuning skills?

Either way, lets see what kinda crazy power you can make out of a small(er) motor...
 
If you can't pull it off with a well tuned 900 you have no business trying it on a 1200 in my opinion. 900 is the perfect amount of power for a demo. Enough to do any trick in the book, but not going to kill someone who grabs a little too much.

I think you have to have more skill to flip on a smaller motor vs balls to pin a beast motor and try and hang on,,, but if you can hold on it's much easier to pull off tricks with height on the big motor . Getting a feel for the hull is easier for most on a smaller motor as you can focus on handling and ride quality .

A 900 in a circus or KDX will do anything you want it to. A 900 is "less violent" than a 1200, but will hurt you just the same. 900 would be a better choice IMO, but I don't think it matters much. If you can ride, either will work. If you're new and demo..ing, either will jack you up :)
