HELP - Convert Bunks on PWC Trailer for Standup

I'm looking for ideas to convert one side of this PWC trailer to haul a standup without grinding the existing brackets off. Moving the bunks closer together doesn't work because they're still too far apart. turning them doesn't work either because the brackets stick up too high and would gouge the hull.

Any ideas?

What about 2x6 bunk, move brackets to lowest holes and slot the boards to allow you to rotate the bunks over/thru the welded on uprights. Front and back bunk brackets put inside of uprights, so slot is after support. As viewed in pic, outer bunk would rotate clockwise and it matting bunk would rotate counter clockwise. Could this get you 12" ? You could also mount your bunk brackets off center of the 2x6 boards to gain some length to span that distance

Another option might be to get lengths of flat steel and replicate the mounting holes in one end for the bunk mounts. Test fit by clamping to the existing mounting bracket and sliding back and forth until you get the correct spacing for your bunks. Obviously, the deeper you go into the 'V' between the bunks (to narrow the spacing), the lower the bunks will sit. I would use strips of old plywood during the proof of concept phase to determine all your dimensions before purchasing the correct-sized steel.
 
As a super lazy way you could put two carpeted 2x4’s across the existing bunks since most stand ups have a large cross section of the hull flat.
