Help: Engine cuts out and gets loud in air

My ski wants to die randomly in the water. However, I have found that it consistenly dies at a specific point as well: if i run it wide open on the water, let off the throttle till it idles again, then quickly try to throttle it back up, it wants to die. I'm usually able to bring it back before it completely turns off if I just keep pinning the throttle. The ski also shakes a lot in the air after a jump and the impeller makes a weird noise. Any thoughts on this? Possible carb issue? I'm hoping somebody else has had this problem.

Notes: new oem coil installed already.
Sxr 800 engine.
It runs great out of the water.
It ran great in the water before, and I haven't added any new parts.
The issue seems to be getting worse over time.

Plugs look good and the dying isn't consistent, but I'll try taking the carbs apart. I was thinking water in fuel too perhaps

I've had a similar issue twice. Once it was a poor performing fuel pump, the atmospheric diaphragm was hard brittle. Once it was my fuel tank check valve that wasn't letting enough air in the tank to keep up with fuel consumption.

I always start with the basics though. Check compression and spark to be sure your chasing a fuel issue.
