How much is my single carb holding back the engine really?

Like the title says, how much am I giving up running the single carb and 61x cases on my square nose? Not sure if its a 44 or 46 but its an aftermarket Mikuni with no choke from the factory. Motor has 61x cylinder bored to 84mm, porting, 100octane domes [volume wise according to ada] carved into a oem head, protec cdi, and a protec pipe with gasket matched exhaust manifold going into a round nose H2o designs waterbox. Overall very simple and normal type package I'd say.

My wifes ski also has a 760 in it but factory with the high port timing, and its faster everywhere including from a dead stop. Driving me nuts. Granted, she has a B pipe, but otherwise the only real difference is the 62t cases and dual carbs. I think I need that. Don't actually care about top speed, but I want to jump out front from a stop and jump waves higher then her :)
 
like I tell everybody, one carb gives you half the power of 2.
in reality, you get a lot more power out of a properly tuned dual setup.
the bigger the carbs, the more rpm you get.
that's why all the old race boats I picked up always had dual 48 novis, blackjacks or full specs on a 701.
I think 44s are the best dual setup for low end and all around performance.
dual 38s are probably best on 61x cases that aren't properly ported
 
There’s something to be said for intake velocity, especially on a two stroke. I’m sure these guys have more experience than me but I don’t think a dual carb setup, especially on a 61x top case is going to make that much difference. I wondered the same thing until my buddy got a round nose with about the same setup as my square minus his dual carb setup, and they’re the same speed in a drag race, I actually pull a bit harder than him in the midrange. Both skis have a head and bpipe and aftermarket prop. Hardly a definitive test but it deterred me from trying to pick up a dual carb setup and 62t case
