Edit: Never mind. I'm a moron, I didn't read your post correctly. Do you mean do the sides and bottom with one sheet, no cuts between the bottom and sides?
If you DO have holds you can do the sides without seams. Cut your turf with extra on the bottom, in the area where the holds are, you can get it to bend around the holds without any cuts. Just heat and work the turf from the middle as you go into the holds. Something like this if it's for a RN:

They all look good. Quick question. I notice people who use under padding like in post # 2 seem to mold in an area for your feet where the footholds are. Are they just cutting the under padding to the shape of a foot? Wouldent you want to have the extra padding where your feet will be a lot of the time while your riding?

I don't think it makes a big difference on flat. If I was in the surf I am sure I would feel differently.

Even with the largest of holds there is only so much room after you pad and turf. It comes down to where you might have to sacrifice some padding to still be able to fit your feet in comfortably. I'd rather have 1 8mm layer on top and bottom vs. say 2 8mm on the bottom and just turf on top. So the answer comes down to cutting/sanding out a bottom layer in the shape of your feet to still be able to run 2 layers in the rest of the tray for you knees/etc.

still plenty of padding under the feet, just not as thick as the main tray. there's not enough room in the foothold to get your feet in with the extra thick padding, i still have a couple of layers of the thin in the foot area. The edges even provide a little extra grip also
