stock head vs. aftermarket???

okay another one of my newb questions
for purposes of cost of a build compared to gained performance
what do I really gain by going with say an ADA Head compared with getting a stock head milled??
I know the domes are interchangeable so you can make your compression changes with out replacing the head but beyond that???

some will say a stocker is better as you can use the stock head gaskets etc
however , getting into an aftermarket with a girdle kit will help you avoid a cracked cylinder, which will ruin a good day of riding

that is what i was wondering cause you could have 3-4 stock heads milled for differnet compressions for the cost of an aftermarket ..
thanks.. wasnt sure how much you were really gaining and I didnt even take cooling into consideration
