Total length of the cable, diameter of cable(5mm,6mm etc), throw of the cable(how far the inner cable extends out of the outer cable) and they need to know what ferrules and ends you need on the cable(barrell ends etc), you should be able to get most of this either off your old cable or by doing some quick measurements.

since these things (regardless of company) seem to break a lot in my experiece would it be worthwhile to jump up to a 8 or 9mm cable. Tougher to bend... i assume any other idea?

Yes as long as the ferrules on the end of the cable will still fit into whatever they have to fit into.I believe all Terrycables cables are teflon lined also,

I just go to west marine and buy a 1/16" stainless cable for 80cents a foot and put a universal stop on the end.
Please explain... Do you just feed the cable back through the outer layer? Do you remove the outer part from the hull first? Do they have the universal stops as west marine?
