I would do a seal leak down test on motor to see if your seals leak, usually this is the source of lean conditions.
Only way I know to tell 440/550 is take head off and measure piston or cylinder diameter. If you have to replace the seals you will be pulling the head anyway.

Get a Clymer book, it will have all the info you need in there.
The head and gasket will make a difference as one way will block cooling connections between the cylinder and head.
I did it first with a 550 pump and 19 skat, 50 mph.
Now with the 750 140mm pump and 9-17 skat it's much faster but I didn't measure speed before winter.
I run a 750 with b pipe in my 550 conversion with the stock tank. It fits but I had to heat and form the stock 550 tank a little to clear the pipe.
The 750 on a 550 pump is fun but once you put the new rhaas kit in so you can run the 140 mm pump you will be stoked, puts a huge smile on my face...
