Custom/Hybrid Best Standup for Carving Buoys?

Yes if carving is your goal than deepening the strakes will definitely help. And if this ski is all that's in your budget then adding Tubbies and deepening the strakes would be even better. I used to have a 95 SXI. It was a great ski, but by today's standards it would be considered obsolete (when compared to the SXR). Just because its Obsolete doesn't mean it's not a super fun ski to ride. My SXI was a great rec ski. But before you spend a ton of time and money in modifying you need to ask yourself what is your ultimate goal? It sounds like you just want a decent handling ski to carve around in lakes and rivers. If so, you're in luck because that's where an SXI shines. They handle very well in smooth water and are super fun to ride. However, If your ultimate goal is to get into racing and to compete, then any mods you do to your SXI, although helpful will still fall short of the handling of the newer skis, so you are probably better off saving your cash to get an SXR or a 08+ Superjet.

Since the SXI is close, my plan is to freshen it up into a better all around ski. I bought it new almost 20 years ago so it is hard to get rid. I guess it has some sentimental value. But by todays standards, it is a barge. The other half of the plan in my head is to build a new AM ski. My problem there i picking which hull to start with. There are too many good choices. I want short and quick freestyle hull but want to ride surf stand with a longer pole.

Those old 750s are fine rec skis. People get very focused and want to excel at their chosen activity . The 750s dont fit in these days since nobody wants to drag race or set up a tight slalom course, this is where the old hull does fairly well. If you want to be at the cutting edge of cool, just spend a lot of money.
