The question I would ask yourself is when you are riding at the lake are you only wake chasing and carving or do you want to flip without any assistance, as I personally have found flips off a boat wake vs off your own setup wake, are a completely different thing.
My hull is a flatwater hull and IMO if you are going for a flatwater flip a flatwater hull makes this alot easier than a surf hull (surf hulls are normally a "heavier" layup, therefore increasing weight, more weight = more power and/or skill needed to flip (in my experience), surf hull will probably do it but flatwater flips are kinda what flatwater hulls are made for.
Yes a flatwater hull wont be ideal in the surf but if you are there 5 days of the season it may not bother you that much, but something to keep in mind is flatwater hulls are normally a "lighter" layup which can make them prone to damage from extreme height drops in the surf.
