it gets me up on plane but but wont go past that. Almost feels like it's missing or running on one cylinder but I starts and idles just fine.
Coils/plug wires would be a good next step, do you have a multimeter so you can test? Or if you have a spare just throw it in quick
Common sense says your issue would most likely have to be with a part you just changed but you never know..
When you do run it is there a major difference in temperature between the two cyls by chance?

yes I do have a good multimeter. I have an extra coil I could swap as well. what's the best way to check cylinder temp? I have a laser temp gun. Just shoot the head temp?

I personally check the head and upper sides of the cyl on the front and back side (wheel and coupler). Temp gun works, your booger hooks are also good at picking up differences in temp. Have you performed a leak down test? What do your plugs look like?

so I swapped out the coil with a spare that I had. It started right up and reved way up without even touching the throttle. I hit the kill switch to stop it. I started it a few more times and it did the same thing. Any thoughts? I checked the idle adjustment screw and it was turned all the way down.

Sweet, one issue sorted out hopefully!
Air in the fuel line(s), air leak at a gasket, worn down throttle shaft/throttle plate, major lean condition can all cause a “runaway” on the stand (but it isn’t a true runaway until you can’t kill it with the stop button alone and your ass is clinched :) )

Turned out the throttle cable was just sticking a little. Ran like a champ on the lake today. Thanks to all for the help.
