Problem that needs Solving

From your description it sounds like an exhaust leak or fuel delivery problem. You usually have spark or you don't. A bad cdi or stator may lose spark then regain it, but normally after it has cooled down. Not immediately.

Have you pulled the hood when it quits to look for smoke?

Check the internal filters on the pump side of your carbs, in line filter, and check tank for debris.

Definitely going to check fuel tank now that I noticed debris in in-line filter. Next step is carb pump because I have a feeling there is going to be some type of debris in there.

Problem fixed! Turns out the in-line fuel filter and the basket screen in the carb were full of debris and preventing fuel to go through the carb. Also, one of the check valves in the carb had somehow been pinched inwards. Replaced/cleaned the items listed above and now the ski runs perfectly. Thank you to everyone who chimed in and I appreciate your advice.
