The advance curves of the 61X CDI and 62T are different, as yurkanip said, 62T is better. The 61X and 62T have the sex of the white with red stripe wire changed. So to use a 62T CDI on a 61X stator, a male to male jumper has to be used.

Has anybody put the OEM (using the word Factory here is sure to create confusion) pipe from a 760 Raider on a 701 61X? I have heard that it could be a cheap B pipe alternative, obviously without the tuning capability.

Ultra high molecular weight polyethylene. I'm in Australia so I can't help you out as to where you would get it. Any sort of durable plastic for putting on bunks will make launching and retrieving easier.

Are you planning on using the ski in salt water? If so, you may want to reconsider carpet on the rails. It holds salt and sand. I think UHMWPE is the best. It's so slippery you don't need the winch. And the ski just slides off when launching. If you use your ski in fresh water then I guess...
