Since you're making a stud this doesn't matter but if ever shortening a bolt make sure you put the die on before cutting. Will save a lot of headaches.

For lock on grips use pipe thread sealant on the screws.... If you don't you'll be cutting them off after a year or two when you need to remove. As mentioned above they corrode and the small allen strips/rounds. Might not be an issue for fresh water only but...
Why not make them wider and run the foothold channel all the way up mafia style?
If you're gonna put the effort into mind as well get everything out of it you can....
