What are peeps opinions on smoking/bbq/cooking with dry rubs vs marinades? I'm always curious, I used to marinade just about everything, except a good steak, but lately I have been concocting dry rubs and it tastes so much better.

It's all about a good dry rub with brown sugar in it to get a good caramelization. We dry rub ribs, wrap them in tin foil with a splash of dark beer and bbq on low heat for 3 hours, then uncover and put them back on a hot grill for 30 min or so while basting with a sweet/spicy bbq sauce.. For sure go rub over marinated IMO.

Dry rub too. I used to marinade and have since switched. Marinade tends to burn on the outside of the meat when cooking hot/fast imo. Try brining if you want to add flavor/moisture to meat (plus you can still use dry rub).

sorry just now seeing this. i do both. this was a BBQ chicken mostly for my wife. when smoking i brush on the sauce with about 30 minutes left otherwise it burns badly. i do all three depending on what im after. dry rub has its advantages with chicken and pork. i prefer marinades with fish or turkey. brinning is a great way to add lots of flavor and not dry out on a smoker just takes plenty of pre planing. i have a terrific salmon marinade if tweaked over the last several years and its perfect on smoker or on the grill. big plus is almost everyone has all the ingredients already but it does need to sit in marinade at least 5-6 hours i like to leave it over night in the fridge
