What's your view look like today?

Super stoked to start dry aging for the first time! Steaks and smoking meats have become my hobby outside of skis.
Was very impressed with Costco. Butcher gave me some tips, told me which end of the loin is the best for aging etc. Hella stoked! Now just gotta wait 30 days.

This is cool. I've always wanted to get into this. I worked at a restaurant in the Virgin Island a long time ago. The chef there did some amazing stuff. He would dry age his own rib roast and cut up into individual steaks. He would age for 28 days and would have a rotation of four roasts going so they could be served one day a week. Absolutely amazing. That place ruined me for basically most restaurants. Some of the best meals of my life.

Sell me that ski. I saw at the zone in Daytona this year and wanted to buy it. It deserves to come back to Oside
Kid ain't gonna sell it. He's had tons of offers. It draws way too much attention. Paint work is great but the build quality is terrible. Only soft silicone on all through hull lines/pipes. Leaking through every spot possible. Exhaust pipe didn't even reach all the way back so it was bubbling through the foam and pushing water out the front foot hold. Talk about attention to detail...they just tossed the hull cutouts in the foam too.

LOL I don't know really but that sounds about right!

I have been in both. 327=high revving screaming banshee!
