Yes I agree on the consistency of readings to monitor health. That being said, using one gauge exclusively is as important as the quality of the gauge.
You really should use the adapter that matches the reach of your plug for best results.

You may have to burn them out with an EDM. You could pound them in a bit further and use loctite bearing retainer to fix the bearings.

When you blow in are you pressurizing the tank and putting the line back on while the tank is still pressurized? I would look at the fuel pump check valves and pulse line then.
Did you rebuild the carbs? check your pulse line and carb pump valves for creases or tears? Did you ride with the vent tube off AND the new tank vent valve off? could the new valve be bad?
